What is shaved ice?

Shaved ice is a frozen dessert made by shaving a block of ice into fine, fluffy, snow-like ribbons, then flavoring it with syrup and toppings. Unlike a snow cone, which uses crunchy crushed ice, shaved ice is soft enough to melt on your tongue and absorbs flavor all the way through.

It exists in many cultures under many names — Hawaiian shave ice, Japanese kakigori, Korean bingsu, Taiwanese baobing, Filipino halo-halo and Mexican raspados — but the core idea is always the same: ice shaved into snow, dressed up with something sweet.

What's it made of?

At its base, shaved ice is just frozen water. Everything else is topping: fruit syrup, fresh fruit, condensed milk, jellies, boba and more. Milk-based versions freeze sweetened milk instead of water for an ice-cream-like texture.

That's why shaved ice is so customizable — and why a fruit-forward bowl can be surprisingly light.
