What is kakigori?
Kakigori is a Japanese shaved ice dessert made from ice shaved so finely it seems to melt on contact, topped with bright fruit syrups and sometimes condensed milk, matcha or sweet bean. It dates back over a thousand years, when shaved ice topped with sweet syrup was a luxury reserved for nobility.
Today it's both a nostalgic summer-festival treat and a refined artisan dessert, with shops obsessing over ice clarity and blade sharpness.
