What is bingsu?
Bingsu is a Korean shaved ice dessert built on finely shaved frozen milk — 'milk snow' — rather than plain ice, which gives it a soft, melt-in-your-mouth texture closer to ice cream. It's piled with toppings like fresh fruit, sweet red bean (pat), condensed milk, rice cake and more.
It's traditionally a shared dessert, meant for two people over a long, chatty cafe afternoon.
Bingsu vs regular shaved ice
The key difference is the milk snow. Water-based shaved ice is icier and more refreshing; bingsu is creamier and richer. Both are delicious — bingsu just leans dessert-forward.
