How shaved ice is made
Great shaved ice starts with a clear, slowly frozen block of ice, which shaves into clean ribbons instead of crumbly shards. A sharp, finely set blade peels the block into thin sheets that curl into snow.
The snow is piled loosely and tall (never packed), then flavored — often in layers — with syrup, fresh fruit and toppings so every spoonful tastes as good as the first.
