Homemade Shaved Ice Syrups: Ratios & Fresh Fruit Recipes

The base ratio

A good all-purpose syrup starts at roughly equal parts sugar and water, simmered until the sugar dissolves, then cooled. From there you fold in fruit.

For fruit syrups, cook fresh or frozen fruit into the simple syrup, then strain. Add a squeeze of citrus to keep the flavor bright and stop it tasting flat.

Three to start with

These three cover sweet, tropical and tart — a balanced little starter kit.

  • Strawberry: simmer berries into simple syrup, strain, finish with lemon
  • Mango: blend ripe mango into light syrup, thin to taste
  • Lime: simple syrup plus fresh lime juice and zest for zip
