Why Hand-Shaved Ice Beats Machine-Crushed

The secret ingredient is patience.

Why Hand-Shaved Ice Beats Machine-Crushed

Fresh snow, made to order

Shaving ice fresh for each bowl means the snow is at its fluffiest the moment it's served. Pre-crushed ice sits, clumps and weeps; fresh ribbons stay light.

It's a little slower, and that's the point. Good things take a beat.

Why it holds flavor better

Thin ribbons have more surface area, so syrup clings evenly instead of running straight to the bottom. Every spoonful tastes the way the first one did.

It also just looks better — you can sculpt fresh snow into, say, a smiling cactus. You cannot sculpt a snow cone.
