Milk snow — the star of Korean bingsu and Taiwanese snowflake ice — freezes sweetened milk into a block, then shaves it into ribbons. The result melts like the softest ice cream and carries a gentle dairy sweetness of its own.
Because it's already creamy, it needs less syrup and plays beautifully with fruit, red bean, boba and toasted grains.
