The Science of Fluffy Shaved Ice

It starts with the block
Fluffy snow begins with a clear, slow-frozen block. Ice frozen slowly forms larger, more uniform crystals that shave into clean ribbons instead of crumbly shards.
Warmer block temperatures (just a few degrees below freezing) shave softer and fluffier than rock-hard, deep-frozen ice — one of the quiet tricks of the trade.
Blade, angle and speed
A sharp blade set to a fine angle peels the block into thin sheets that curl into snow. The finer the shave, the more the ice behaves like powder and the faster it melts into flavor.
Put it together — good block, sharp blade, gentle temperature — and you get snow that practically floats.
