'Raspado' comes from raspar, to scrape. Vendors scrape ice into a cup and top it with syrups made from real fruit — tamarind, mango, lime, hibiscus and more — often with a swirl of chamoy and a dusting of chili-lime salt.

The magic is the sweet-sour-spicy-salty balance that makes your mouth water for the next bite.

A neighborhood staple
