A thousand-year-old treat
Kakigori appears in Japanese writing as far back as the Heian period, when shaved ice topped with sweet vine syrup was a rare luxury reserved for nobility — ice was precious before freezers.
Once ice became widely available, kakigori spread to everyone, and summer festivals filled with the sound of hand-cranked shavers.
The modern craft
Today's kakigori artisans obsess over ice clarity and blade sharpness to produce snow so fine it seems to vanish. Toppings range from classic matcha and sweet bean to seasonal fruit and delicate house-made syrups.
