Bingsu: Korea's Cafe-Culture Shaved Ice

From patbingsu to today
Bingsu began as patbingsu — shaved ice with sweet red bean. As Korea's cafe culture exploded, so did bingsu, evolving into towering bowls of fine milk snow topped with fruit, injeolmi (rice cake), matcha, cheesecake bites and more.
It's meant to be shared, usually by two people over a long, chatty afternoon.
The milk-snow revolution
The move from icy water-based ice to soft milk snow is what turned bingsu into a phenomenon. That melt-in-your-mouth texture set a new global standard for what shaved ice could be.
