Two styles

Taiwan has two beloved traditions: traditional baobing, a mound of shaved ice piled with toppings like grass jelly, taro and fruit; and xue hua bing, 'snowflake ice,' shaved from frozen flavored-milk blocks into impossibly thin, self-curling ribbons.

Night-market roots
